Barbecue in a Crockpot – Dinner Made Easy

Here are three barbecue-in-a-crockpot meals made from beef, chicken, and pork. Enjoy!

Beef Barbecue in a Crockpot

2-3 lb. boneless chuck or rump roast
1 teaspoon finely minced garlic
1/4 cup minced onion
1 teaspoon salt
1/4 teaspoon ground pepper
1 cup bottled barbecue sauce

Sprinkle roast with salt and pepper. Add garlic and onion, spreading with fingers or spoon to cover both sides of roast. Place seasoned roast in crockpot. Pour on barbecue sauce evenly to cover roast. Set temperature control to “low” and cook for eight hours. Shred meat with fork and serve on buns or as the main course for a barbecue-in-a-crockpot dinner with beans and coleslaw or potato salad on the side.

Pork Spareribs Barbecue in a Crockpot

One rack of spareribs (about 2 lbs.)
1 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon ground pepper
1/4 cup finely minced onion
1 can tomato sauce (8 oz.)
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
3 teaspoons lemon juice

Cut between ribs to make portions small enough to fit into crockpot. Rub salt, pepper, garlic powder, and minced onion onto both sides of spareribs. In oven, broil ribs for about 5 minutes on each side or until browned. In small bowl, mix together tomato sauce, brown sugar, vinegar, and lemon juice. Cover ribs evenly with mixture. Cook spareribs barbecue in a crockpot on low setting for 8 to 10 hours. Great with sweet potatoes, macaroni and cheese, and a salad.

Chicken Barbecue in a Crockpot

4 boneless, skinned chicken breasts
1 cup tomato sauce (8 oz.)
2 tablespoons brown sugar
2 teaspoons soy sauce
2 tablespoons apple cider vinegar
1/2 teaspoon crushed red pepper flakes
1 teaspoon finely minced garlic
2 tablespoon lemon juice
1 teaspoon salt

Place chicken breasts in crockpot. Mix together remaining ingredients and pour evenly over breasts. Cook on low temperature setting for 4 hours or until chicken shreds easily with a fork. Serve with baked potatoes and coleslaw or serve on buns for the best chicken barbecue in a crockpot you’ve ever eaten!
