Exotic Meat Sausage, full of flavor, less fatty than your normal everyday sausage, and it is better for you too! Some people might cower away from the exotic sausages—especially when they hear that the sausage is alligator, kangaroo, ostrich, snake or turtle. These are the slightly more odd kinds, some other exotic sausage include bison, bear, venison and the like.
So to explore what nature has to offer, here are some recipes for exotic meat sausage:
Wild Boar Sausage Jambalaya
Serves 4-6
Ingredients:
1 16oz. package of Wild Boar sausage (which is considered to be Exotic Meat Sausage), cooked and sliced*
3 tablespoons vegetable oil
2 boneless skinless chicken breasts, cut into large dice
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon minced fresh thyme
1 teaspoon ground oregano
1/2 teaspoon minced fresh basil
1/2 teaspoon crab boil seasoning
1/4 teaspoon salt
3 cloves garlic, minced
1 green pepper, medium diced
1 red pepper, medium diced
1 onion, large diced
2 celery ribs, medium diced
3 tomatoes, cleaned, peeled and seeded
1/4 cup flour
1/2 teaspoon Hot Sauce
1 tablespoon Worcestershire Sauce
1 cup tomato sauce
2 cups chicken stock
1 cup long grain rice
3/4 pound fresh medium shrimp, peeled and cleaned
Directions:
Heat oil in stockpot or Dutch oven.
Add sausage and chicken and cook for 2 minutes.
Add spices and garlic and cook for 1 minute. Add vegetables and cook until tender.
Add flour; cook, stirring constantly for 1 minute.
Add remaining ingredients (except shrimp), cover and simmer for 45 minutes.
Add shrimp 10 minutes before serving. Serve in bowls as a complete meal.
Shrimp and Bison Sausage Divine
Serves 4
Ingredients:
1 package Bison Exotic Meat Smoked Sausage
12 ounces fettuccine pasta
1 teaspoon garlic
1 teaspoon basil
1 pound shrimp, peeled and de-veined
1 cup parsley
1 quart Alfredo sauce
Directions:
Cook pasta as instructed. Reserve.
Slice sausage into 1/2 inch diagonal slices. In a large skillet sauté sausage until almost heated through, approximately 5 minutes.
Add garlic and basil, cook for 1 minute, and then add shrimp.
When shrimp start to turn pink add parsley and Alfredo sauce.
Bring to a soft simmer and serve over pasta.
Gobbler Goulash
Makes 4 servings
Ingredients:
1 pound Wild Turkey Exotic Meat Sausage
1 tablespoon butter
1 small onion, minced
1 tablespoon paprika
2 tablespoons caraway seeds
1 tablespoons white vinegar
1 cup tomato juice
1/4 cup sour cream, blended with 2 tablespoons flour
salt
Pepper
Directions:
1. Cut Wild Turkey Sausage into 1-inch thick slices. Heat butter in a 1 _ quart saucepan and in it sauté onions until soft and bright yellow. Do not let them brown. Add paprika and caraway seeds and sauté another 3 to 4 minutes.
2. Add vinegar and wild turkey slices and stir over low heat until sausages are well coated with spices. Add tomato juice, cover, bring to a boil, reduce heat and simmer 15 minutes. Stir in sour cream and season to taste. Heat thoroughly, but do not boil.
