To begin with, you will need to choose your acid base. This can be wine, vinegar, yogurt, citrus juice, or lemon juice. A simple rule of thumb is to use 1 cup of liquid per pound of meat. Remember to add a few tablespoons of oil such as Olive Oil, and your seasonings. Some great seasonings to use with meat marinades include onion, garlic, rosemary, dill, mint, sage, and thyme.
