Veal Loin Roast with Apple Ginger Sauce (serves 4)
2-2 ½ lbs. Veal Loin Roast
2 tsp. Olive Oil
1C. Orange or Citrus Juice
¼ C. Grated Apple
¼ C. Raisins
1 tsp. Cinnamon
¼ tsp. Ginger
¼ tsp. Nutmeg
First, preheat oven to 325 degrees. Place the Veal Loin Roast (bone side down) in roasting pan. Cover with Orange or citrus juice. Press remaining ingredients into a paste mixture and press into the top of the Veal Loin Roast. Bake uncovered for 1 hour and let stand fifteen minutes before serving.
Veal Loin Chops
Veal Loin Chops are cut from Veal Loin Roast. The Veal Loin Chops are comparable to T-bone steak. These delectable chops are known for their exquisite taste.
Butter and Sage Veal Loin Chops (serves 4)
4 Veal Loin Chops
1 large bunch fresh Sage
2 tablespoons Butter
Salt and Pepper
Season Veal Loin Chops with Salt and Pepper. Brown butter in skillet (med high-high heat) and place Veal Loin Chops in skillet. Brown underside of Veal Loin Chop, place 3 sage leaves on top of chop, flip chop and brown sage side of chop- 3-4 minutes. Serve with Sage garnish

The Veal Loin Kidney Chop is cut from the Veal Loin Roast and part of the veal kidney. Veal Loin Kidney Chops are usually pan-fried or braised.
Veal Loin Top Loin Chops
Veal Loin Top Loin Chops are the same as Veal Loin Chops only with the Top Loin Chops the tenderloin is removed. Veal Loin Top Loin Cops are typically pan fried or braised.
